Ingredients: 10 eggs ½ c flour (sifted) 1 tsp baking powder (sifted) ½ tsp salt (sifted) 1 pint creamed small curd cottage cheese 1 lb jack cheese shredded ½ cup butter or margarine melted 2 cans (4 oz each) diced green chilis

Directions:Beat eggs in mixing bowl or food processor until light and lemon colored. Add sifted flour, baking powder, and salt. Add cheeses and blend in melted butter. Hand stir in the green chilis. Pour into buttered 9x13 pan. Bake at 350º for 45 minutes. |

Notes: This dish can be made the day before and left in fridge to be baked. It also stays really well in fridge after it is baked. I also freeze individual servings to be heated in micro on the way to work etc.
This is our holiday breakfast that the kids ask for all year long. It's a great hit at pot lucks and super easy to throw together but has great flavor and pairs well with fresh fruit. It is wonderful hot or cold.
