3/4 cup water
3/4 cup vinegar
1-1/2 tsp course salt
12 pepper corn
1 red onion
2 jalapeños

Directions:
Directions:
In small pot heat water, vinegar, salt, and jalapeños to a boil.

Peel and thinly slice onions & jalapeños.

Place onions & jalapeños in glass jug and cover with boiling water. Let sit for one minute, then drain and place in mason jar.

Pour vinegar solution (brine) over onions - make sure onions are fully submerged.

Put on lid & let cool to room temperature.

Place in refrigerator overnight.
