1 1/2 pound of peaches, peeled, halved, pitted and cut into pieces.
1/2 cup honey
1 tablespoon lemon juice
1/4 cup sugar for a light coating

Directions:
Directions:
Line a cookie sheet with parchment paper.
In a large saucepan cook the peaches, honey and lemon juice, gently stirring and mashing the fruit until peaches are thick. This should take about 20 to 30 minutes.
Cool the mixture then pour onto the lined cookie sheet and spread with a spatula to an 1/8 thickness.
Bake in the oven at 190 degrees for about 3 hours or until fruit leather is tacky, but does not stick to your fingers. Let cool completely. Once cooled place the smooth side down onto a sheet of wax paper and cut the fruit and wax paper into desired strip size. Roll up the fruit up strips and store in an air tight container for up to 1 week.

You can also make strawberry, blueberry, apple, raspberry, pineapple and mango fruit leather. You can also try drying the fruit leather in the sun instead of baking in the oven, I think it would take long for it to dry and you'd probably have to cover with some cheese cloth to keep the bugs off. But it might be fun to try it that way.
