12 dove breasts (or 1.5 lbs chicken)
Large jar pepperoncini
1 red onion
1 lb thick cut bacon
Zesty Italian dressing
toothpicks

Directions:
Directions:
If using dove, remove from the bone and separate each breast. If using chicken, pound each breast down to 1/2 inch thick and cut into 2 inch pieces.

Chop onion into 1 inch pieces. Remove pepperoncinis from the jar and remove the stems and seeds cut into 4 pieces per pepper.

Assembly:
Wrap pepper around onion

Cut bacon in half and lay on cutting board. Place chicken on top of onion and pepper and wrap all in bacon. Pin with wooden toothpicks so all stays in place.

Place in double layered zip top bag (so toothpicks don't poke through) and pour italian dressing over to coat well. Marinate in refrigerator for 3 hours.

Cooking:
Place on hot grill until the dove/chicken is cooked through (165º)and the bacon has a good char.

Dove is one of the delicacies that I have enjoyed all of my life. After shooting a box of shells (sometimes way more) to get my limit, I can almost taste these poppers as I'm cleaning the birds. Make them the night before and take them to the tailgate to grill for your friends!!
