4 Quarts plain popped popcorn, not microwave or buttered
1 Cup Brown sugar
½ Cup Karo™ Corn Syrup, light or dark
½ Cup Butter
½ tsp salt
½ tsp baking soda
1 tsp Pure Vanilla
1 Cup Mixed Nuts or nuts of your choice, optional
Directions:

1. Spray a large roasting pan with cooking spray. Add popcorn and place in oven preheated to 250º while preparing caramel.

2. In a heavy 2 quart saucepan, mix brown sugar, corn syrup, butter and salt. Stirring constantly over medium heat bring to a boil.

3. When caramel mixture comes to a boil, boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.

4. Drizzle syrup over warm popcorn, stirring to coat evenly and sprinkle nuts while stirring

5. Bake 50 minutes, stirring often and keep caramel mixed including caramel that melts to bottom of pan. Remove from oven and spread on foil that has been sprayed with cooking spray.

6. Cool; break apart. Store in airtight container.
