4 tbsp cornstarch
1 C sugar
3 eggs
2½ C milk
1½ C Angel flake coconut

Directions:
Directions:
Separate egg yolks. Set aside egg whites for meringue. Beat egg yolks until light. Mix together cornstarch and sugar. Add with milk to egg yolks, alternating a little at a time, blending each time. Stir in one cup of coconut. Cook over medium heat until thick, constantly stirring. If lumps start to form, continue to stir until lumps dissolve.Cool. Place in a baked pie shell, top with meringue, sprinkling remaining coconut on top of meringue, and bake for 15 minutes on 350º until meringue cooks. Cool before cutting.
