2 small heads cauliflower, cut into florets (or 2 bags)
2 T. butter
3 cloves garlic, minced
3 T. flour
2 c. milk
2 oz. cream cheese, softened
1 1/2 c. shredded cheddar, divided
Kosher salt and fresh pepper
6 slices of bacon, cooked and crumbled
1/4 c. sliced green onions

Preheat oven to 350º.

Cook cauliflower until slightly soft (roast in oven for 10 minutes, use very little evoo or steam in microwave for 5 minutes).

In a large skillet, melt butter. Add garlic, cook one minute, add flour and stir for 2 minutes. Add milk and bring to a low simmer, add cream cheese, whisking until combined. Remove from heat and stir in one cup of cheddar until melted and season with salt and pepper.

In a 9 x 13 dish, add cauliflower and pour over cheese sauce, stir to combine. Stir in half the bacon and green onions.

Bake for 20 minutes, add more cheese and bacon, bake an additional 10 minutes
