1 12-oz. orzo pasta
1 ½ lbs. raw shrimp; shelled and deveined
1 small red pepper
1 T. olive oil + more for cooking shrimp
¼ t. each of salt and pepper
¾ c. mayonnaise
2 T. dry white wine (or more :))
¾ t. each salt and pepper
To Taste: dried dill

Directions:
1. Cook orzo according to package instructions. Drain and rinse to cool quickly.
2. Sauté shrimp in olive oil until just pink. Add to orzo.
3. Cut pepper into fourths; remove seeds and place on baking sheet and roast at 400º for 20 minutes. Cool and dice.
4. Add peppers and mayo, dijon, wine, salt and pepper and dill to shrimp and orzo.
5. Chill before serving. Can be made the day ahead of serving.

This is from my friend Shannon that I used to be in book club with. You could also make this recipe with the already cleaned and cooked shrimp for an even easier recipe!
