2 (6-8 oz./175-250g.)fillets of cod
salt (to taste)
freshly ground black pepper (to taste)
2 C/450mL. cold water
2 tbsp/30mL. dry white wine
juice of ½ lemon


Sauce:
1 C/250mL. tomato sauce
2 tbsp/30mL dry white wine
1 tsp/5g. fresh basil, finely chopped
1 tsp/5g. fresh oregano, finely chopped

1tbsp/15g. black olives, drained and sliced
2tsp/10g. fresh parsley, finely chopped

Season cod with salt and pepper

Put water, wine and lemon juice in a large skillet and bring to a boil on high heat, then reduce heat slightly and steam cod for 5-6 minutes

Remove cod from skillet and keep warm; discard water, wine and lemon juice.

Mix tomato sauce, wine, basil and oregano together in skillet and simmer on medium heat.

Add cod to tomato sauce, wine, basil and oregano and cook on medium heat for 3 minutes, basting the cod with the tomato sauce, wine, basil and oregano.

Put cod on a warm serving platter or on warm plates. Coat with sauce, garnish with olive slices, sprinkle with parsley and serve.
