Roasting Pan Drippings
1 cup Turkey or chicken stock
1/2 cup Cornstarch
Water - to dissolve cornstarch
1 Lemon
1 Teaspoon Worcestershire sauce
Sea salt and black pepper to taste

Directions:
Directions:
1. Scrape all the drippings off of the bottom of the roasting pan. Pour drippings into a saucepan. Ladle off excess fat with a gravy spoon.

2. Add about 1 cup of chicken broth to the drippings and bring to boil over medium high heat.

3. In a separate small bowl take corn starch and add just enough water to dissolve the corn starch. Beat cornstarch with a spoon to remove lumps.

4. Slowly add the cornstarch mixture to the drippings, stirring constantly. Add the juice of lemon, teaspoon of Worcestershire sauce, and salt, pepper to taste. Add additional lemon juice and/or Worcestershire sauce, if desired.
