Roasting Pan Drippings
1 cup Turkey or chicken stock
1/2 cup Cornstarch
Water - to dissolve cornstarch
1 Lemon
1 Teaspoon Worcestershire sauce
Sea salt and black pepper to taste

Directions:
1. Scrape all the drippings off of the bottom of the roasting pan. Pour drippings into a saucepan. Ladle off excess fat with a gravy spoon.

2. Add about 1 cup of chicken broth to the drippings and bring to boil over medium high heat.

3. In a separate small bowl take corn starch and add just enough water to dissolve the corn starch. Beat cornstarch with a spoon to remove lumps.

4. Slowly add the cornstarch mixture to the drippings, stirring constantly. Add the juice of ½ lemon, ½ teaspoon of Worcestershire sauce, and salt, pepper to taste. Add additional lemon juice and/or Worcestershire sauce, if desired.
