Sweet and Sour Chicken Recipe

1 - 8oz. can pineapple chunks
2 lb. cut up chicken (cooked)
2 tbsp. brown sugar
1 can chicken broth
1/2 c. vinegar
2 tbsp. soya sauce
1 clove garlic, minced
1 green pepper (chopped)
3 tbsp. cornstarch
1/2 c. water
1 tbsp. shortening

Drain pineapple chunks, reserving juice. Brown chicken in shortening.
Drain off fat. Add pineapple juice, brown sugar, vinegar, soya sauce, chicken broth & garlic. Cover and cook for 10 minutes. Add pineapple and green pepper. Cook until done. Mix cornstarch and water, then add to sauce to thicken.
