Ingredients: 1 Acorn Squash cut in half 1 tbsp butter per half Splash of olive oil Brown sugar to taste

Directions:Prepare the squash: Cut the acorn squash in half and clean out the seeds. Apply a dash of olive oil to each half. Take some softened butter and spread around the fleshy part of the squash. Place the squash on a baking sheet and cover with tin foil flesh side up. Preheat your oven to 350º. Place the squash in the oven and check every 30 minutes. Baking time will vary depending on the size of your squash. Cook until the fleshy part is soft. Using a spoon, carefully remove the fleshy part of the squash into a small greased casserole dish. Use a potato masher to make sure the squash is broken down into an almost mashed potato consistency. Add another tbsp. or two of butter (depending on how creamy you want the dish). Sprinkle brown sugar over the top of the casserole and bake for another 30 minutes.
* For a more savory version, omit the brown sugar and add salt and pepper with a pinch of garlic. |
