½ cup shortening
1¼ cup sugar
2 eggs
1 cup hot water
½ cup cocoa
1½ cup flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla

Double Boiler Icing:
1 egg white
¾ cup sugar
⅛ cream of tartar
3 tablespoons water
½ teaspoon vanilla

Directions:

Grease 8 inch square pan and line with parchment paper. Cream shortening. Gradually add sugar to shortening and cream until fluffy. Add eggs to mixture. Combine hot water and cocoa and stir to dissolve completely. Sift together flour, salt, baking soda, and baking powder and ado creamed mixture alternating with cocoa mixture. Add vanilla last. Bake at 350º for 50 to 55 minutes. Let cool.

Double Boiler Icing:
Combine egg white, sugar, cream of tartar and water in top of double boiler and beat together just to completely blend ingredients. Place over rapidly boiling water and beat with a rotary beater until mixture is white and very lite. Icing is done when it barley holds its shape and is not runny as beater is pulled out. Approximately 5 to 7 minutes. Remove from heat and do not beat any more. Fold in½ teaspoon vanilla.

Fluffy Marshmallow Variation:
Add 3 marshmallows, cut into quarters to icing immediately after removing from heat.
