1 2/3C all purpose Flour
2/3C whole wheat Flour
1tsp Salt
4tsp Baking Powder
1/4C Sugar
1/8tsp Nutmeg
1/3C Butter
1/3C Raisins AND/OR candied Mixed Fruit
3/4C mashed PEI Potatoes
1 whole Egg
1 Egg Yolk
3/4C Milk
1 lightly beaten Egg White
granulated Sugar

Combine flour, salt, baking powder, sugar, and nutmeg in large bowl

Cut in butter until mixture is the consistency of cornmeal

Stir in raisins AND/OR candied fruit

Combine potatoes, whole egg, yolk and milk in medium bowl

Whisk until no lumps remain

Make a well in the centre of the dry ingredients and add liquid all at once

Stir with fork to make a soft, slightly sticky dough
If necessary, add 1-2tbsp more milk

Press lightly into ball and knead gently on floured surface about 6x

Roll out dough to 1/2inch thickness

Cut into triangles OR rounds

Place on ungreased baking sheet

Brush with slightly beaten egg white and sprinkle with sugar

Bake 450F for 13-15mins or until golden
