Ingredients:  
2 sticks margarine or soy butter
1 3/4 cups brown sugar
2 egg sized scoop full of tofu (Soft or firm)
2 cups Unbleached all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips
3/4 cup walnuts (optional)

Directions:
Directions:
Preheat oven 325
Cream margarine and sugars.
In separate bowl, mush tofu with fork until similar to yogurt texture.
Add tofu to sugar margarine mixture.
Sift dry ingredients together and stir in, mix thoroughly.
Add chocolate chips and walnuts if used.
Form balls for cookies. Bake 8-12 minutes
Remove from oven while centers are still slightly soft.
