1 lb hamburger- browned & drained
3/4 c. onion, diced
4 Tbsp butter
1 Tbsp garlic powder/salt or 2 cloves minced
3 c. chicken broth
1 tsp dried basil
1 tsp dried parsley
4 c. diced peeled potatoes OR 1 pack frozen hashbrowns
1/4 c. flour
1 1/2 c. evaporated milk
2 c. cubed Velvetta
1/4 tsp salt
1/4 tsp pepper
1/4 c. sour cream
Optional- I usually add a can of drained corn or other veggies I may have on hand to the soup.

Directions:
Option 1: I put all of this in a crock pot on low for 4-6 hours. Add sour cream toward last hour. Can top with chopped dill pickles and tomatoes if want.

Option 2: Saute the hamburger, butter, onion & garlic together until cooked. Add spices and veggies in pot with broth & beef and potatoes and bring to a boil. Reduce heat and cover, simmer 15-20 minutes until veggies are soft. Add flour stir in. Gradually stir in evaporated milk, velvetta, and sour cream, stirring often until cheese is melted.
