3/4 c. butter
1 1/2 c. sugar
3 bananas, mashed
2 eggs, well beaten
3/4 c chopped walnuts (optional)
1 tsp vanilla
2 c. flour
1 tsp baking soda
3/4 tsp salt
1/2 c. buttermilk (or a ratio of cup white milk with tablespoon lemon juice in place of buttermilk. Let it sit a few minutes to kind of curdle)

Directions:

Mix all together and put in 2 loaf pans. Bake at 325 for 1 hour 15 minutes.

Also excellent to make into muffins instead- only bake about 15-20 minutes- until done with clean toothpick.
