1 c. mashed bananas (about 2 medium)
⅔ c. sugar
¼ c. vegetable oil
1 large egg white
1 large egg
1 ¾ c. flour
1 ¼ t. cream of tartar
¾ t. baking soda
½ t. salt
cooking spray

Directions:
Directions:
1. Preheat oven to 350º.
2. Combine first 5 ingredients in large bowl; beat with a mixer at medium speed until smooth.
3. Lightly spoon flour to measure. Combine with cream of tartar, soda and salt. Stir with whisk. Add flour mix to banana mix and stir until just moist.
4. Spoon into a 8x4inch loaf pan sprayed with cooking spray.
5. Bake for 40 minutes or until toothpick comes clean. Cool on rack for 10 minutes and remove from pan.
