2 c. apples
3 T. sugar
1 t. cinnamon

2 c. sugar
1 c. oil
4 eggs
1/4 orange juice
2 t. vanilla
3 c. flour
1 T. baking powder
1/2 t. salt

Directions:
Directions:
Peel, core, and dice apples. Mix together with 3 T. sugar and cinnamon. Set aside. In a large bowl, combine sugar & oil, and beat. Add eggs, vanilla, and orange juice. Stir together dry ingredients and add to creamed mixture. Beat until smooth. Pour 1/3 of the batter into greased and floured 12 c. bundt pan alternately with 1/2 of apple mixture. Repeat. End with layer of batter on top. Bake at 325' for 60 minutes or until cake tests done. Cool in pan 10-15 minutes, then turn out on wire rack or serving plate to complete cooling. Sprinkle with confectioners sugar.
