1 c. flour
t. salt
3 large eggs
1 c. milk
4 T. unsalted butter

Directions:
Directions:
1. In a large bowl, mix together flour and salt. Make a well in the center.
2. In another bowl, beat together eggs and milk; then pour into the well. Gradually pour the egg mixture into flour until batter is consistency of heavy cream; slightly lumpy.
3. Allow batter to rest 30 minutes to an hour.
4. Preheat oven to 425.
5. Place 1 t. butter in each cup of a 12-cup muffin or 2 6-cup popover pans. Heat in oven until butter melts; about 1 minute.
6. Divide batter among cups- full.
7. Bake until puffed and golden brown; about 20 minutes.
8. Turn out popovers and serve warm.
