Pretzel Rolls Recipe

1 c. warm water
2 tsp. yeast
oil for bowl
2 c. bread flour
1 tbsp. sugar
1 tsp. salt

6 c. water
c. baking soda

1 egg yolk

1. Bloom yeast in water.
2. Add flour, sugar and salt.
3. Mix and knead until smooth.
4. Proof for about 30 minutes.
5. Punch down and knead until smooth and springy.
6. Divide into rolls and proof 15-20 minutes.
7. Boil 6 cups of water and add cup baking soda.
8. Dip each roll for 30 seconds into boiling mix.
9. Brush egg yolk onto rolls, then slash top of rolls.
10. Sprinkle with coarse salt.
11. Bake at 425F for 10-12 minutes until golden brown.
