¼ c. unsalted butter; more for baking dish
3 T. flour
1 ½ c. milk
1 ½ t. salt
pinch of nutmeg
fresh pepper to taste
2 lbs. broccoli; 4 heads cut into florets (8 cups)
1 c. grated cheddar cheese (4 oz.)
½ c. bread crumbs

Directions:

1. Preheat oven to 450º. Butter a 8x8x2 Pyrex baking dish.
2. Melt 3 T. butter in medium saucepan over medium heat. Whisk in flour until smooth. Cook 1 minute more; stirring constantly.
3. Slowly add milk, 1½ t. salt and nutmeg and bring to boil; whisking constantly. Lower heat and simmer until thickened; about 10 minutes. Season with pepper. Remove from heat.
4. Meanwhile, steam broccoli in steamer with salt; 5 minutes.
5. Put broccoli in prepared dish. Sprinkle with half the cheese. Pour sauce over and cover with remaining cheese.
6. Melt remaining 1 T. butter in pan. Add bread crumbs and cook about 2 minutes. Cover gratin with bread crumbs and bake about 20 minutes.
