1 head cauliflower
1 tsp. kosher salt
6 T. butter
2 T. fresh lemon juice
2 T. whole grain Dijon mustard
1½ tsp. grated lemon peel
1 T. chopped fresh parsley

Directions:
Directions:
Preheat oven to 400º

Grease or butter a rimmed baking sheet.

Cut cauliflower in ¼" thick slices. Arrange slices in a single layer on baking sheet. Sprinkle with salt. Roast about 15 minutes until slightly soft.
Melt butter, whisk in juice, mustard, and lemon peel. Spoon over cauliflower and roast about 10 mins. longer. Sprinkle with parsley.

Serve warm or at room temperature.
