1 cup Egg Whites
1/2 teaspoon Cream of Tartar

2-1/4 cups Flour
1-1/2 cups Sugar
3 teaspoons Baking Powder
1 teaspoon Salt
5 Egg Yolks
3/4 cup Cold Water
2 teaspoons Vanilla
3 squares Chocolate, Grated Finely

Directions:
Preheat oven to 325º F. Beat egg whites and cream of tartar until stiff at high speed for 3-4 minutes. Stir together flour, sugar, baking powder and salt. Make a well and add egg yolks, cold water and vanilla. Mix well. Pour batter over whites and fold in 3 squares chocolate. Fold into batter. Pour into ungreased pan. Bake 55 minutes at 325º F, then raise to 350º F for 10-15 minutes. Turn upside down and cool 1 hour before removing from pan.
