1 cup Sugar
1/2 cup Corn Oil
1-1/2 cups Sifted All Purpose Flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1 teaspoon Cinnamon
1 cup Grated Raw Carrots
2 Eggs
1/2 cup Chopped Nuts
1/2 cup Raisins, if desired

Directions:
Directions:
Beat sugar into the oil. Measure sifted flour, add baking powder, salt, soda and cinnamon, and sift together. Add these sifted dry ingredients to the sugar/oil mixture and mix in the carrots. One at a time, add eggs and beat well after each addition. Mix nuts in well and raisins if used. Put into an oiled 8-1/2"x4-1/2"x-1/2" loaf pan. Bake for 55-60 minutes in a 350º F oven.

The cake has a tendency to crack along the top. To eliminate this cover with aluminum foil over the pan for the first 20 minutes of baking. This cake stays moist and gains flavor when kept.
