1 (15 oz.) can pinto beans, drained & rinsed
1 (15 oz.) can black-eyed peas, drained & rinsed
1 (15 oz.) can white shoe peg corn, drained
1 cup chopped celery
1 cup green pepper, chopped
1 cup green onions, chopped
1 small jar chopped jalapeño peppers
1 small jar chopped pimento

Dressing - boil and cool the following:
1 cup salad oil
½ cup cider vinegar
½ cup sugar
½ tsp. salt
½ tsp. pepper

Directions:
Directions:
Combine all the ingredients, including the dressing, and let sit overnight in the refrigerator. Serve with Frito Lay "Scoops".
