8 oz. fresh spinach, washed and dried
5 slices bacon, cooked and crumbled
3 hard boiled eggs, slices
2-3 green onions, sliced with green part

Directions:
If you want to take the time, you can trim off the spinach stems, it is prettier that way, however most do not do this.
Mix together the spinach, bacon crumbles and green onions, Scatter the sliced eggs around and serve with the warm bacon vinegarette dressing found in this section of the cookbook.

I have made this for years! it is one of our favorites and I mostly leave the stems on.
