1 quart broken romaine lettuce leaves
1 1/2 quarts chicken stock
1 medium potato, peeled and cubed
1/2 c. (or more) powdered milk
3 tbsp. butter
Salt and white pepper, to taste

Directions:
Directions:
Cook romaine lettuce in the chicken stock until the lettuce wilts.
Add the potato and cook until the potato is very soft.
Puree in blender and put through a fine strainer.
Return to the pot, stir in butter and powdered milk.
Add salt and pepper.

Vallis' was wonderful French restaurant where Dennis and I loved to go for a special, romantic dinner. It was a favorite of many Fresnans.
