1 pint fresh strawberries, washed, hulled, and diced
¼ small white onion, finely minced
½ jalapeno pepper, seeded and finely minced
1 Tbsp finely minced fresh mint (or cilantro)
salt
juice from 1 lime
apple chips, tortilla chips, or cinnamon pita chips

Directions:

Mix strawberries, onion, pepper, mint, salt, and lime juice in a medium bowl. Add more salt or lime juice to taste. Transfer to a serving bowl and serve with apple chips or cinnamon pita chips.

I made this salsa in Newport to keep Alice and Jack's dietary restrictions in mind, using apple chips as an accompaniment. I was blown away by this sweet and sour variation on classic salsa. It's an easy recipe that is a great appetizer for any gathering, especially when strawberries are at the peak of their season. And each time I make it I think of the joys of Newport family gatherings.
