1 (12 ounce) box Rice Chex cereal (about 11 cups)
1 1/2 cups semisweet chocolate chips (10 ounces)
3/4 cup smooth peanut butter
6 Tbsp unsalted butter
1/4-1/2 tsp kosher salt
1 1/2 tsp vanilla extract
2 1/2 cups powdered sugar, divided

Pour cereal into a large bowl, and prepare a baking sheet by lining it with parchment paper. Set aside.

Place the chocolate chips, peanut butter, butter and salt in a medium microwave safe bowl. Microwave on high for 1 minute. Stir, then continue microwaving in 15 second intervals, stirring between each, until melted. Remove from microwave and stir.

Stir in the vanilla.

Pour the chocolate peanut butter mix over the cereal and toss until cereal is evenly coated.

Place 1 cup of the powdered sugar in a gallon size ziploc bag. Add half of cereal, a second cup powdered sugar and the remaining cereal and remaining powdered sugar. Seal the bag and shake vigorously until cereal is evenly coated with the powdered sugar.

Pour onto prepared baking sheet, spreading it out. Let cool, about 10 minutes, then store in an airtight container
