1/4 cup extra virgin olive oil (EVOO)
1 cup lactose-free milk
1 large egg
1 1/4 cup corn meal
1 cup unbleached whole wheat flour
1/2 cup stevia sweetener
1 tablespoon baking powder
1/8 teaspoon salt
1 teaspoon Mrs. Dash® salt substitute
1 cup chopped vegetables (sweet onion, red bell pepper, green bell pepper, banana pepper, tomatoes and chili pepper)

Pre-heat oven or air fryer to 400º F

Add coconut oil to grease the bottom and sides of the loaf pan.

In a large bowl, mix the EVOO, milk, and egg with a wire fork or wisk until well
blended. Add the cornmeal, flour, stevia, baking powder, vegetables and salt all at once: stir just until the batter is moistened (batter will be lumpy). Pour batter into loaf pan and spread evenly in pan. Smooth the top.

Bake 25 minutes or until golden brown and a toothpick inserted in the center comes
out clean.

Serve warm with plenty of New Balance margarine.
