2 ½ pounds potatoes, peeled and cut into small chunks
1 stick light butter
1 cup (8 oz) nonfat sour cream
¾ cup part skim shredded mozzarella cheese, divided
1 tablespoon chopped chives, plus a few more for topping
1 teaspoon salt
¼ teaspoon garlic powder

Directions:
Directions:
Boil potatoes in water for 15 minutes, strain. Melt margarine, mix with sour cream and ½ cup shredded mozzarella. In large bowl, combine potatoes, sour cream mixture, chives, salt and garlic powder. Pour into 9x13 inch glass dish sprayed with cooking spray. Spread evenly. Bake in preheated 350 degree oven for 10 minutes. Sprinkle remaining ¼ cup mozzarella over potatoes, sprinkle lightly with additional chives. Bake 10 more minutes.
