4 chicken breasts
1 - 2 c. GF white wine
1 - 2 tbsp. lemon juice
1 c. GF flour
Salt & pepper
1 small can sliced mushrooms
2 tbsp. Earth Balance (dairy free butter alternative)

Directions:
Directions:
Rinse and cut the chicken breasts horizontally so that they are thinner. Use a meat tenderizer on each side. In a large plastic bag, mix approximately 1 cup of GF flour with salt and pepper. In a frying pan, melt 2 tbsp. of Earth Balance.

Put each piece of chicken in the bag with the flour mixture and shake until chicken is coated and then place in frying pan. Cook until chicken is golden brown on both sides. Add sliced mushrooms. Pour lemon juice and wine over chicken. Cover the pan and let everything simmer about 5 minutes. The liquids will reduce; add more wine, if needed. Remove chicken, our the sauce over the chicken and serve with rice.
