Chicken Broccoli Casserole Recipe

6 chicken breasts, cooked and cubed
2 - 10-ounce package frozen broccoli or blanch fresh broccoli
3 can cream of chicken soup
1 to 1 1/2 cups of chicken broth (to thin it out)
1 1/2 cup mayonnaise
6 tablespoons lemon juice (I use 3)
1 1/2 teaspoon curry powder or 1 teaspoon salt and 1/2 teaspoon pepper
3 cups grated cheddar cheese
***2 cups uncooked rice + 1/2 cup water (if you want to make it a full one-pot dish!)

Optional Topping:
1 cup soft bread crumbs or 1 cup corn flakes
2 tablespoons butter
1/2 cup slivered almonds

Directions:
Directions:
1. Preheat oven to 350º. Grease 9x13 pan.

2. Cut up broccoli into bite-size pieces then blanch (a process to just heat the broccoli until it turns a bright green color) and drain the water off. Then place the blanched broccoli into the bottom of the pan.

3. In a medium-sized bowl, mix the soup, chicken broth, mayo, lemon juice, seasonings, and cheese together.

3. Layer chicken on top of the broccoli, then add the soup mixture on top of the chicken.

4. Mix the optional toppings together and sprinkle on top.

5. Cover with tinfoil and bake for 20 mins, then uncover and bake for 10 more minutes.
Alternative Version:***If you want to add the rice, dump the soup, seasonings, water, mayo, lemon juice, and rice in the pan. Stir to mix all together, then add the broccoli and chicken on top.***If you don't have time to cook the chicken, you can place the chicken breasts on top, sprinkle with salt, pepper, and paprika. Cook all of this for 1 1/2 hours covered, then uncover add toppings and bake for another 30 minutes.***
