1-9inch pie shell, baked and cooled
2 pints fresh strawberries, washed and drained
½ cup honey
1½ tsp. Lemon juice
1 T. Un-flavored gelatin
3 T. Cold water
1-8 oz. Container whipped topping






Directions:
Directions:
Puree one pint berries, stir in honey and lemon juice. Set aside. In small bowl, combine gelatin and water. Place bowl over pot of boiling water and stir until gelatin is dissolved. Add dissolved gelatin to pureed mixture and mix well. Place in refrigerator and chill until mixture is slightly thicker than unbeaten egg whites. Spoon ½ berry mixture into pie shell, arrange remaining berries over mixture, spoon remaining pureed mixture over berries. Chill until set. Serve with whipped topping.
