4-6 slices bacon, chopped
2 spoons of flour
2 spoons of sugar
1 egg
vinegar
milk

Directions:
Directions:
Chop bacon and saute in pan until crispy.

Put the flour, sugar and egg in a small bowl and thin with a little milk. Add to the hot fat in the pan and add a splash of vinegar. Stir quickly to keep from having lumps. Thin with milk. Cook for about a minute or so to cook off flour taste. Taste for seasoning. It should be slightly sweet and sour.

This dressing is very good on Iceberg lettuce or curly endive. For Lettuce with Bacon Dressing - Tear up lettuce and put in a bowl, add sliced hard boiled eggs on top and then dress with this dressing. Very traditional PA Dutch salad. It is good, but eat it quick because the lettuce will get wilty in a little while (iceberg more so than endive).
