2 T butter
1 T freshly geared lemon zest, plus more for serving
½ lb. fresh or dried linguini
4 T heavy cream (or light cream)
2 T freshly squeezed lemon juice
2 T freshly grated Parmesan cheese, plus extra to serve on the side

Directions:

1. Bring pot of salted water to boil

2. Heat butter in a skillet and add the lemon zest

3. Cook linguini according to directions. Drain

4. Add the cream to the butter and lemon mixture. Add the pasta and lemon juice and stir until just heated through. Add the Parmesan and toss. Serve with additional Parmesan and lemon zest on the side. Basil leaf to garnish...

FYI...this is good as is, but I doubled the sauce part and it was better, as the pasta seems to soak up the sauce too much.

As the pandemic wore on through the summer I found this fast and easy recipe.

Playing golf four days a week and still feeding our beautiful extra family members, socially distanced, of course, I needed something quick and delicious.

Who doesn't love pasta? Or lemon? Or light cream sauce?

Put them together and we found a winner!
