Ingredients:  
1 lb. tomatoes, chopped (about 4 tomatoes)
¼ cup chopped red onion
¼ cup chopped seedless cucumber
¼ cup chopped red bell pepper
1 clove garlic, minced
extra virgin olive oil
1 TBSP red wine vinegar
¾ tsp salt
½ tsp cumin
⅛ tsp cayenne pepper

2 avocados, diced (about 2 cups)

chopped cilantro garnish optional

Directions:
Directions:
Combine all ingredients except avocado in large bowl. Mash lightly with potato masher. Stir in 1 cup water. Stir in avocados. Cover and chill for at least 1 hour.

Serve with cilantro sprinkled on top, if desired.
