˝ of a large red onion, sliced very thin
2 TBSP extra virgin Olive Oil
8-10 oz fresh baby spinach leaves
2-4 oz crumbled gorgonzola or blue cheese
1 pear or apple, peeled and chopped in bite size pieces
˝ c coarsely chopped walnuts
˝ Bacon Vinaigrette Dressing
1 TBSP white wine vinegar or rice wine vinegar

Directions:

Heat the 2 TBSP oil in large skillet. Add onion. Sauté 5 minutes Reduce heat and simmer 10 minutes longer or until soft.

Toss spinach, cheese, pear and walnuts in large salad bowl. Set aside.

Stir dressing and vinegar into skillet with onions. Cook 2 more minutes.

Pour hot dressing mixture over salad and toss to coat. Serve immediately.
