2 teaspoons oil
2 medium skinless chicken breasts, cubed into bite sized pieces
1 medium onion, finely diced
2 cloves garlic, minced
1 cup salsa
2 tablespoons fajita seasoning
1/2 teaspoon salt
2 cups chicken stock
4 cups penne noodles
1/2 cup heavy cream
1 cup shredded mozzarella cheese
1 1/2 cups diced mixed bell peppers

Directions:
Directions:
Add oil, chicken, onion, garlic, salsa, fajita seasoning, and stock to the pot. Give everything a good mix. Add the pasta, and make sure it stays on top of the other ingredients. If the stock is not covering it, add more stock so all of the pasta is covered.

Secure the lid, and set to pressure cook on high for 4 minutes. Do a quick release.

Add cream and cheese while the pasta is still hot, and stir until all the cheese is melted.

Stir in the bell peppers, cover with the lid, and leave it on for 5 minutes for the peppers to soften.
