5# small baby red potatoes
2 cups chopped onion
3 stalks celery
1 cup green pepper (optional)
8 - 12 hard boiled eggs
1 tbsp sugar
1 tbsp vinegar
2 cups miracle whip
garlic salt
celery salt
salt
pepper

Directions:
Directions:
Boil potatoes and cook until tender.

While potatoes are cooking, dice onion, celery and green pepper. Place onion in bowl and sprinkle with sugar. Mix. (this will release the juice from the onion)

Make dressing with miracle whip, salt, pepper, garlic powder and celery salt. Add more seasoning according to your taste. (You can also use a blend of miracle whip, mayonnaise and sour cream for a different taste.)

When potatoes are cool enough to handle, peel potatoes and cube. Sprinkle vinegar over cooked potatoes. Grate hard boiled eggs over potatoes.

Add vegetables and dressing to bowl. Fold in dressing and mix thoroughly. Sprinkle with paprika before serving.

Mom was famous for her potato salad. I recall her process for chopping the potatoes.

Cut a new potato in half. Hold cut pieces together and slice in apposite direction. This will leave you with a crescent shaped cut vs. a dice cut.
