2 Cube Steaks (about 1/3lb each)
3/4c Flour
1tsp each salt and pepper
1/4tsp each of Smoked Paprika, Onion Powder, Garlic Powder, Baking Soda and
Baking Powder
3/4c Buttermilk
1tsp Tabasco
1 Egg
1/2c Vegtable Oil

Gravy:
2T grease and 2T Flour
1 to 1.5c Whole Milk
1/4c Heavy Whipping Cream
Salt and Pepper to taste

Directions:
In shallow bowl, whisk flour, 1tsp pepper, 1tsp salt, paprika, onion powder, garlic powder, baking soda and baking powder and set aside. In seperate bowl whisk buttermilk, tabasco and eggs and set aside. Pat steaks dry, season with 1tsp salt and pepper and let stand for 5 minutes. Pat dry again with papertowels. Dredge steaks in flour mixture, shake off excess, then dredge in buttermilk mixture, let excess drip off, then once again in flour, shake off extra. Place on sheet pan or metalrack and press any of the remaining flour into steaks, making sure to cover entire steak (even sides).
Let sit 10 minutes. Preheat oven to 225-250, Meanwhile, heat oil in heavy skillet or large cast iron over med/hi heat about 1/4" deep. Place steaks in pan and fry 3-4 minutes lper side, until golden brown. Do not flip more than once or breading will fall off. Remove steaks and drain on a paper towel. Place in pre-heated oven. Turn skillet to medium. Gravy-Pour remaining grease into glass bowl, don't scrape skillet, bits will flavor gravy. Add 4T grease, whisk in flour and whisk 2-3 min. Combine cream and milk and slowly drizzle about 2.5c into skillet, whisking continuously and bring to simmer. Cook until smooth and creamy, about 5-7 minutes.
