4 divided tbsp butter,5 minced shallots,1 tsp paprika1/2 tsp smoked paprika 1/4 tsp cayenne pepper , 1/4 cup sherry, 32 slender asparagus spears cut to 4 inch length.1 tbsp olive oil salt/pepper 1 1/2 cup light cream 4 tsp flour3/4 lb. cooked chopped lobster !?2 tsp worcestershire sauce ,grated zest of 1 lemon 1/2 cup toasted pine nuts 2 Portuguese sweet muffins cut in half 1 tbsp vinegar 4 Xtra large eggs.

Heat oven to 425 degrees with rack in the middle. In a skillet melt 2 tbsp butter add shallots cook 5 min. Add paprikas and cayenne, stir and add sherry simmer 1 min. Roast asparagus on bake sheet with olive oil ,salt/pepper about 10 min. In a skillet melt 2 tbsp butter stir in flour. add light cream slowly stirring or whisking.Stir in shallots ,worcestershire and a dash of nutmeg if you have it. turn heat to low add lobsta . Cook until heated well. remove from heat and cover skillet. Toast and butter muffins. In a bowl mix pine nuts and parsley. Poach eggs in a skillet with a dash of vinegar about 4 mins boiling water . Put spears on muffin ,top with egg and spoon over the lobster and sauce . sprinkle with nuts and parsley
