1T Butter, melted
1/2 medium chopped Yellow Onion
1/4c Butter, melted
1/4c Flour
2c Half & Half
2c Chicken Stock
1/2lb fresh Broccoli (1c)
1c julliened Carrots
1/4tsp Nutmeg
8oz shredded Chedder
Salt and Pepper to taste

Directions:
Saute onion in 1 T butter, set aside. In large pot whisk melted butter and flour on medium heat about 2-3 minutes. Slowly whisk in half & half and chicken stock and let simmer 20 minutes. Add broccoli, carrots and onion. Simmer on low about 25 minutes until broccoli and carrots are tender. Add nutmeg. salt and pepper and cheese, melt and serve.
