1tbsp olive oil, 4 med thick chops 1 inch thick, salt/pepper 2 cloves chopped garlic ,2 cups of sliced pickled peppers med/mild with 2 tsp of vinegar juice, 5 hot peppercini peppers chopped .

Directions:
Directions:
heat oil in skillet rub salt pepper and spice rub if on hand to pork chops .sear both sides, 5 min per side.lower heat add garlic and cover 5 min. Remove from heat keep chops warm, add pepper mix to skillet with juice. cook 2 min stirring . Serve over chops .

Some add mushrooms /butter in a reduced sherry sauce also . My taste likes the pork better from the grill with a char. You decide.
