1/2c. Olive Oil
2T whole grain Mustard
3 sprigs fresh Rosemary
1 Bay Leaf
2 cloves Garlic, smashed
2T Honey
2lb Beef Tenderloin
1tsp each of Kosher Salt, Pepper and Rosemary
1 clove Garlic, minced
-Yogurt Sauce:
1/2c Greek Yogurt
1/4c Sour Cream
1tsp prepared Horseradish
Juice of half Lemon
Salt to taste

In large bowl, mix oil, vinegar, mustard, thyme, rosemary, bay leaf, smashed garlic, and honey. Add meat and cover with plastic wrap and refrigerate for any where from 1hr to 1 day. Preheat oven to 450 degrees. Lined rimmed baking sheet with foil and fit wire rack inside. Remove loin and pat dry with paper towels. Season all over with salt, pepper, rosemary and minced garlic. Roast to liking (20 minutes rare). Let sit 5-10 minutes. Make sauce and serve on side.
