1T canola Oi
1 Lg Yellow Onion, diced
3 cloves Garlic, minced
1T Cumin
Kosher salt to taste
1c. Quinoa
15oz Black Beans, rinsed
1 rotisserie Chicken, shredded
16oz. jar Salsa Verde
6c. Chicken Broth

Sour Cream and Cilantro for serving

Directions:
Directions:
heat oil in large pot over medium heat Cook onion & garlic about 6 minutes. Add cumin and season with salt. Add beans, chicken and salsa verde and stir. Add 5c. chicken broth and quinoa and bring to a boil. Reduce heat and simmer until quinoa is tender, about 20 minutes. If quinoa absorbs liquid, add another cup broth. Serve with sour cream and cilantro.
