2 c. cornmeal
2 eggs
2 c. buttermilk
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
2 tbsp. canola oil

Directions:
Directions:
1. Mix together eggs, buttermilk, and canola oil in a medium size mixing bowl.

2. In a separate bowl, combine dry ingredients and stir into egg mixture.

3. Pour into a well-greased 9-inch baking pan.

4. Bake at 425ºF for 30-35 min. or until done.
