Pea Soup (best ever) Recipe

Ingredients: 3 cups chicken broth (can use half broth and half water if you prefer) 1 ham bone if you have it left over from a ham dinner (if not, no worries) 2 c diced onions 2 c diced carrots 2 c (1 pound bag) dry split peas 2 cups diced ham (this would be the left overs from your dinner ham that allowed you to have the ham bone mentioned above). I've purchased a ham steak, cut into small chunks and used that in place) 2 bay leaves 1 tsp minced garlic 1 lg russet potato diced into cubes (can omit, but it helps thicken the soup - and who doesn't like potatoes)

Directions:In large pot combine broth, onions, carrots (and if you have it) the ham bone and bring to a boil.
Add all remaining ingredients EXCEPT potatoes. Reduce heat and simmer for 2-3 hours. Add potatoes with 45 minutes left to cook. Remove the ham bone and enjoy!

Notes: This soup is so easy. Don't think "I hate peas/pea soup" because I HATE peas and never make them and LOVE this soup. My kids and grandkids reluctantly tried it and even took extra bites!
